A fermented paste made from broad beans and chili peppers, doubanjiang is the soul of Sichuan cooking. It brings complex heat, saltiness, and umami to dishes like Mapo Tofu and dan dan noodles. The "spicy" version (là doubanjiang) is the standard; look for Pixian-style for authentic flavor.
